March Menu

I like to make up a menu each month, and then attempt to do most of my shopping all in one fell swoop. This has both good and bad sides. It's great to get it all done at once- one plan, one trip to the stores, one bill. But, it is kind of a pain. To figure out an entire month's meals, and what exactly I need to buy to make it to the next trip. But anyway, here is my attempt at this month. My goal was, obviously, to be as heart healthy as possible. I'm trying lots of new things this month, and I have no idea how they'll turn out. And I'm sure future months won't be quite so health oriented. It's also a short month for us, as we'll be gone the last week, so there aren't as many meals as normal, and my menus change often throughout the month, so who knows if these things will all get made.  But, for what it's worth, here it is!


Main Dishes and Sides:
  • Caramelized Cauliflower Soup, Grilled Ham and Cheese Sandwiches
  • Greek Cavatapi with Spinach and Chickpeas, Garlic Bread
  • Basil Chicken Pasta with Nuts and Mushrooms, Quinoa Fruit and Yogurt Salad
  • Southwest Quinoa Salad with Chicken and Avocado
  • Honey Salmon and Asparagus, Honey Roasted Pears
  • Fig and Brie Grilled Cheese, Caramelized Tahini Cauliflower
  • Lentil Stir Fry, Berries
  • Tuna Pasta with Garlic Nut Sauce, Apples and Sweet Potatoes
  • Pomegranate Chicken and Rice, Peas
  • Lemon Fish and Corn Polenta, Baked Apples
  • Acorn Squash Boats with Quinoa
  • Bean and Lentil Soup
  • Cashew Chicken and Rice
  • Baked Fish, Spiced Sweet Potatoes and Chickpeas
  • Zesty Pomegranate Rice, Chicken, Corn
  • Hummus and Flax Crackers, Carrots, Sandwiches
  • Shrimp and Rice
