Just whipped up a tasty afternoon smoothie snack for my baby and myself, and it was so tasty I wanted to jot it down before I forget it! I figured a "quickie" blog post would be the way to do it. I tried a banana date smoothie today, and it turned out great! Smooth and creamy, rich and caramel-y, and good for you too!
1 Frozen banana, peeled and chopped
6 dates, chopped
1 cup milk
1/2 cup coconut milk
1 tsp vanilla
4-6 ice cubes
1/2 cup plain yogurt
Warm chopped dates and 1/2 cup of coconut milk (this would be a great time to a TBS or two of coconut oil if you have it) in the microwave for about a minute, to soften the dates. Blend this in the blender until creamy. Add the banana, milk, vanilla, ice cubes, and yogurt. Blend until smooth and creamy.
Confession: I didn't have any yogurt. But I had sour cream...and the sweet dates really needed a creamy tang. It was super yummy! I may be tempted to use sour cream even when I have yogurt. :)
